What we’ll do
During my show cooking my collaborator and I will prepare the dough for the traditional sfoglia on a table clearly visible to everyone. While the dough rests, you’ll discover the secrets of the original Ragù Bolognese and the filling for tortelloni, following the original recipes of Grandma Fernanda. While the ragù continues to cook, you’ll see how I work the dough using a rolling pin. I’ll prepare two pasta shapes: tagliatelle and tortelloni.
You’ll attend the preparations and, with your help, we’ll fill the tortelloni together with the traditional filling made of ricotta and close them just as a real Zdoura bolognese do. Zdoura is a dialectal name to define the authentic Bolognese housewives, queens of the kitchen and holders of the secrets of tradition, passed down by mothers and grandmothers. Then we’ll cut the tagliatelle and roll them up to form the famous nests.
After the show cooking you’ll enjoy the lunch: you’ll be seated at the table, with cloth tablecloths and napkins and ceramic plates changed at every course.
I can provide a rental service with driver back and forth from the hotel to the course location. The cost of the service must be calculated separately based on the number of passengers.
